As a kid, when I went vegetarian around 15 years of age, the transition was pretty seamless and without any noticeable differences. (15-21 yrs of age!)
About 15 months ago, when I went vegetarian again, I was plagued by low energy for around 3 months. In the end, I don't know whether my body adjusted, or whether it was my significant workings on my lower energy centers through beliefs and meditation that rev'ed those lower centers up, but I feel great now.
I think the bottom line is cutting out meat is a huge change for the body, and as such one should expect that there are a few months as the body adjusts. I've heard studies (but never read them!) that show that meat eating increases aggression, and you commonly hear that meat helps ground you or that it has dense lower energy center energy (in addition to any other effects).
Thus it is both reasonable and probable that meat eating boosts the lower energy centers, and one needs to take measures to ground, and build lower energy when removing meat from one's diet. Perhaps the body/energy body automatically adjusts, or perhaps one should work upon their lower centers more actively through the appropriate beliefs put into practice. Either way, realize that cutting out meat is a big change, and one should be prepared to aid the body complex in its transition.

Two things I just started:
1. Take some L-carnosine and Acetyl-L-Carnitine (I know they come from meat). This seems to satisfy some need that's still in my body - would hope that eventually my body wouldn't need this anymore. By the way, I take only minute amounts of this - any more and I start to go hyper.
2. Using nuts and fruits and peanuts for midday snack instead of meat.
I still eat eggs, and sometimes butter. Also yogurt - Danon's plain yogurt (not the low-fat.)
Regarding energy levels - I do see a correlation with meat consumption - this is a driving factor for me.
Also have been asking for help in raising the vibrational functioning of my body.
