I think here's a good time to bring up the instrument's distortions. Garlic had often been used to ward off spirits of an unpleasant nature for some time, especially within the western/christian world eg. Vampires
Now the instrument, being a christian mystic may have been influenced by these thoughts and thus been quite responsible for this distortion however I think it's much more likely that the people of that time had received guidance in these issues, especially since use of garlic to ward off spirits has been done all over the world.
As for the spiritual properties of garlic, I really can't think of much. It's one part of the material that actually really surprised me lol. It seems to really clean the body, but I will vouch for the smell theory haha. It's interesting that it has to be cut, perhaps something is released upon doing so?
My father also had a seemingly unnatural affiliation and respect for the plant haha

I raise a LOT of garlic every year in my garden, and we give ristras of softneck garlic as gifts to friends and relatives. I LOVE garlic.

From my understanding, you aren't too far off from the truth, in a sense. And its also, likely, the origin of the whole "vampires being repelled by garlic" idea, as it does, in fact, repel negative astral entities.

Everything that has an outer space/time reality, also has an inner time/space reality as well. The time/space nature of garlic is such that it is perceived as extremely repulsive to negatively polarized entities. Much in the same way that love is repulsive to these entities. It's like "astral bear spray".

There is probably a substance that acts in a similar way towards positively polarized beings, though I'm not sure what that would be. However, it wouldn't surprise from an intuitive standpoint, if it was something like "sulphur".

This made me think about asking my guardian angel for help in aligning and clearing my chakras. I can use all the help I can get. It is also positive to accept the healing. When I asked, I felt some shifts in my energy field.

I don't think so. I think the reason garlic, onions and strong spices are considered rajasic is because a yogi - someone living a sattvic lifestyle - doesn't need it.

Think about it. Onions, garlic and spices purify...they repel negative entities...they cleanse the body of excess, clean the blood, etc. These actions are necessary when one is eating tamasic 'food' (dirty, toxic, dead, meat, etc.) because those foods are toxic and must be cleansed. But, if one is consuming living plants, their bodies are clean and they don't need the cleansing. Therefore, if they eat strong cleansers when they don't need them, the result would be overstimulation.

So it's not a simple matter of good/bad but what is appropriate for the state of the body.

my understanding of the yogic reason to not eat garlic and onions is to help transcend the body complex. they 'root' your consciousness deeper into the material body which pulls you further away from the spiritual self. meat is said to have a similar effect, that by eating meat it will make you more lustful for indulging in the senses, and an increased sex drive...

it is said in some literatures (srimad bhagavatam is one that i know of) that a yogi can purfiy all the senses if he just purifys the tongue. this not only includes mastery of silence/speech, but also cleansing the palette, eating the right foods and not over eating.

the senses must be engaged one way or another, otherwise they will distract the mind. the mind cannot be focused on merging into the self if it is distracted. the yogi strives to engage all senses properly, which is engaging all senses not in his own pleasure, but in service to the creator..... thus, he always blesses his food and water with intention, by offering it to the creator first.

btw, i have heard pilots dont eat garlic or onions a day before flight because it delays reaction time??

Many of the organic compounds emitted by garlic (cut garlic in particular) are rich in sulfur. Does anyone know of any connection (alchemical, occult, etc) that could specifically tie the astral repellent properties of garlic to sulfur?

I found garlic smell and taste very strong and aggressive, maybe the negative entities found it difficult to maintain power in front of them?

The reason according to yoga that garlic "roots the consciousness firmly in the body" is because it is too stimulative. In this respect it is rather like caffeine, or sugar. Gentler foods, which provide nutrition but don't stimulate intense physical responses are more recommended from the yogic point of view.

Garlic is a natural antibiotic, which coincides with it repelling negative energies. Used as a medicine therefore, it is efficacious.
