I try to eat multiple servings of beans a day for their micronutrient profile, especially white beans as they are a good source of calcium, zinc and iron - all nutrients that plantbased eaters should monitor (I use cronometer.com).
Recently I've been making a 50% potato and 50% white bean mash in the food processor with chopped chives and a little bit of oil. Then I have a side of sauteed mushrooms, spinach and tomatoes with steamed brocolli. I love this simple and balanced meal, and have it very often!
