I've switched to a very simple diet just recently.
* 2 meals a day
* each meal consists of a very large fruit juice (fresh), and a plate of pasta with olive oil and tahini as the dressing.
boring? yet betcha!
But I've had my fair share of eating all sorts of food, and there are worse things than boring imo. A lot of foods just make me sleepy and tired; and this is just what happens to work for me.
Of course, I am single and eat alone, and so I can make this work. When I do eat out - extremely rare - but I'm not opposed to it, I do eat vegetarian, as it can be a huge hassle to insist on something that is absolutely vegan.
But 2+ years as vege, and this is the current dietary regime.
