^^Plenum, I do not understand why in Wheat Belly ( I only read enough to find this) the author completely slags wheat even though he seems to realize that it has been completely altered over time.

There's an article I lost track of that explains the process of hybridization which we have selectively controlled in wheats that are most commonly used today. Maybe it's in one of these, I didn't feel like reading the whole things again.
In my opinion the celiac disease is actually from a compounding causation;
-The nutritional ratios are WAY off par, including fibre(not enough) and starch(way too high) either because it is a new variation or from processing.
-the gliaden/glutinen ratio has changed dramatically from heritage seed meaning our bodies have much trouble properly breaking down this substance (which may actually be important, we have been thriving off bread and other grains since ancient peoples on every continent.
Wheat is the only type of seed that monsanto has not been able to make a "round-up ready" crop out of, meaning that the herba/pestacide being sprayed on them are likely actually damaging them (I have no evidence to support this) The wiki on monsanto holds some interesting tidbits, gotta love wikipedia.. Not only is it possible that we we ingest these toxins through bioaccumulation, but they also prevent plants from growing valuable substances for our health that repel insects naturally such as anit-oxidants.
Also let's remember insects need food too, are a part of the food chain and we actually probably benefit from the bacteria on their s***.
I am currently on a gluten free diet which has helped much alleviate any stomach pains I had, but still does not seem right. I plan to take a try at this Einkorn soon.

-corn and soy are the most modified and most highly commercialized cash crop within the US boarders (they have other countries grow tobacco and cane sugar, and coka, coffee and opium). Corn and soy are able to absorb immense concentrations of herba/pestacides. Celiac sufferers are basically dropped into a world full of these product in the supermarket.
-eggs, dairy, and most meats eaten in our world today contain preservatives, added hormones, and/or synthetic vitamins.
remember Ra warns Carla about the ingestion of meats with preservatives, and this was ~30 years ago, I can image what they'd have to say now lol.
-farm raised fish; This deserves it's own topic altogether, and this topic hits close to home. Soon.
